Shrimp fricassee
Yield: 4 Servings
Ingredients:
- 2 tb Butter
- 2 tb Flour
- 1 1/2 c Canned tomatoes
- 2 tb Finely chooped tomatoes
- 2 tb Chopped green peppers
- 1/4 ts Garlic minced
- 1/4 ts Salt
- 1/4 ts Pepper
- 1/8 ts Thyme
- 1/2 ts Parsley flakes
- 1 Bay leaf
- 1/2 ts Celery salt
- 1 lb Shrimp cooked peeled and Deveined
- 2 c Cooked rice
- 1) Preheat oven to 350. F
- 2) Melt butter in large frying pan. Add flour; cook constantly until lightly browned.
- 3) Add tomatoes
Instructions:
green pepper garlic salt thyme parsley bay leaf celery salt pepper and salt; simmer 15 minutes. 4) Add shrimp to frying pan; simmer for 5 minutes. 5) Pack cooked rice into greased custard cups; bake for 5 minutes. 6) To serve unmold rice unto serving platter. Pour shrimp mixture over rice molds.
