Texas meat skillet
Yield: 6 Servings
Ingredients:
- 2 c Ground Meat Mix
- 1/2 c Water
- 14 1/2 oz Crushed tomatoes
- 15 1/2 oz Dark red kidney beans -- Undrained
- 1 c Long-grain rice -- cooked
- 1/2 c Bell peppers -- chopped
- 2 ts Chili powder
- 1/2 ts Salt
- 1/2 c Fat-free cheddar cheese -- Grated
- 1 c Low-fat tortilla chips --
Instructions:
Crushed In a skillet combine Ground Meat Mix and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork. Stir in crushed tomatoes kidney beans rice bell peppers chili powder and salt. Bring mixture to boiling; reduce heat. Cover and simmer for 20 minutes stirring occasionally.
