Impossible chicken parmigiana pie
Yield: 8 Servings
Ingredients:
- 3/4 c Creamed cottage cheese -(small curd)
- 1/3 c Parmesan; grated
- 1 1/2 c Chicken; cooked cut-up
- 5 oz Mozzarella ; shredded
- 1/2 ts Garlic powder
- 1/2 ts Organo dried
- 1/2 ts Basil dried
- 6 oz Tomato paste
- 1 c Milk
- 2 Eggs
- 2/3 c Bisquick baking mix
- 1/4 ts Pepper
Instructions:
Heat oven to 400 degrees. Grease a 10" pie plate. Layer cottage cheese and Parmesan cheese in the pie plate. Mix chicken one-half cup of the mozzarella the garlic powder oregano basil and tomato paste. Spoon over Parmesan cheese. Beat the remaining ingredients in a blender on high speed 15 seconds with a hand beater one minute or until smooth. Pour into a pie plate. Bake 30 minutes. Top with remaining mozzarella cheese. Bake five to eight minutes longer or until knife inserted in center comes out clean. Cool five minutes. High altitudes: No adjustments are necessary
