Zucchini fritters
Yield: 8 servings
Ingredients:
- 5 tb Bisquick 2 ea Eggs beaten
- 1/2 c Parmesan cheese 2 tb Butter
- 1/4 ts Salt 2 c Zucchini grated
- 1/8 ts Pepper
Instructions:
Blend the bisquick parmesan salt pepper. Add eggs. Mix zucchini into batter. Grease hot pan or griddle with butter. Pour batter into pan and fry 3 minutes on each side. Serve warm a delicious way of serving zucchini. Make 8 to 10 fritters. THE ANDERSONS' FOOD GARDEN
