Bed of green lentils

Yield: 6 servings


  • 1 ts Olive oil -Le Puy

  • 1 c Diced onion 2 Sprigs fresh thyme

  • 2 tb Chopped garlic 1 Bay leaf

  • 2 c Diced carrots 1/8 ts Ground cloves

  • 4 c Dried lentils


preferably Salt and pepper Heat the oil in a large skillet over medium heat. Add the onion and garlic saute until tender and translucent. Add the carrot and continue to cook stirring frequently until lightly carmelized. Add the lentils thyme bay leaf and cloves and cover with 1" of water. Reduce the heat and simmer for 15-20 minutes until tender. Add more water as needed. Remove from heat.
